Our vegan, gluten-free Lily Pond Cake is as delicious as it is gorgeous. This special cake is a chocolate-matcha cake, topped with a matcha mousse, blackberry compote, and a lightly sweetened "pond" jelly. We decorated this beauty with matcha-almond sable "lily pads" and buttercream flower toppings.
The 'pond' layer balances out the richness of the chocolate and matcha. Add buttercream flowers, chocolate cookie and white chocolate 'rocks' and you have a pretty delicious scene.
